蘿蔔糕的英文見仁見智: Fried white radish patty; Radish Cake; Steamed Yam Cake
以下po兩種做法
Radish Cake
3 Daikon Radish 日本白蘿蔔
50 g Dried Shrimps 蝦米
50 g Chinese Sausage 臘腸
50 g Chinese Cured Meat 臘肉
50 g Dried Shitake Mushroom 乾香菇
50 g Dried Clam 乾干貝
50 g Pine Nuts 松子
500 g Rice Flour 沾(粘)米粉
2 tsp Chicken Powder 雞粉
Coriander 香菜
Cooking Oil
Finely chop the dried shrimps, sausage, cured meat, mushroom, and clams.
Heat up wok on medium setting. Grease pan with a little cooking oil. One by one, add dried shrimps, sausage, cured meat, mushroom, and clams into the wok. Stir-fry until ingredients are fragrant and golden yellow.
Wash and peel daikon radish. Grate radish using a grater.
Heat up wok on medium setting. Grease pan with a little cooking oil. Add grated radish into the wok. Slowly simmer the radish for approximately 30 minutes until radish is completely soft.
Take the cooked radish off the heat. Once slightly cooled, mix rice flour, chicken powder, two-third of the dried shrimps, sausage, cured meat, mushroom, and clams mixture into the radish throughly.
Scoop radish mixture into a steaming tray of at least 5 cm depth. Steam the radish mixture for 20 minutes.
Before the radish mixture sets into cake, push pine nuts and the other one-third of dried shrimps, sausage, cured meat, mushroom, and clams into the top of the radish cake. Decorate with coriander.
The radish cake can be enjoyed as it is. Or if you prefer yum-cha style, cut the radish cake into slices and pan-fry in a greased pan. |
