朋友試整黃金蝦,明明熟鹹蛋黃已經壓碎,炒完卻不黏蝦身,出事原因係太心急,喺炒鹹蛋黃時,牛油蛋黃汁未炒至起泡泡就將蝦回鑊,蛋黃炒得唔夠透,就黏唔到蝦身。覺得控制唔到火路,不妨用細火,再加少許生油混合牛油,咁樣蝦就會黏得實蛋黃喇!
